Don’t ever ask about recipes in New Orleans, you might start a riot!

Everyone claims that their mama, sister, and grandma make the best gumbo. Then they claim their papas boil the best crawfish. Recipes can vary so drastically, that dishes actually change shape and ingredients. I have seen natives cook "jambalyas" that looked more like macaroni and cheese, and I have eaten gumbos that tasted like onion soup. Just snoop around the different recipes and take your pick.
